An ancient brew from the Rhineland capital city of Dusseldorf, Altbier did not acquire the “Alt” prefix until the mid 19th century. It was then that the new gold colored lager beers of Bavaria and Bohemia were enjoying explosive growth throughout Europe. Alt means old, in this case referring to a beer fermented, as it had been for centuries, with the local ale yeast. This particular strain of ale yeast, unlike its British cousins, thrives at much cooler temperatures resulting in a clean crisp fermentation character with subtle ester notes not found in lager beers. Why did the brewers of Dusseldorf sticke (sic) with their unique ale yeast while much of the world converted to the new lager yeast?
