Several hundred years ago, long before yeast was identified as key to the magic of fermentation, Bavarians noted that beers brewed in the cooler months had a “purer” taste and beer stability than those brewed during the warmer months. This observation and the decree in 1553 of a legally limited brewing schedule resulted in the natural selection of yeast that thrived under very cool fermentation. Thus were the lager beers of Bavaria born. The beer they brewed was dark in color as the technology to make lightly kilned malts had not yet been developed, it was what we call today Dunkel.
